To let the fat and oil drip. Duck is super fattening and oily. They do it with the pork too.

I think it's because of my love peking duck that I like my duck more medium well then rare.

Duck is a rarity for me, but I really do enjoy it. Last time I had it was Xmas, and I'm not sure the exact prep method. It was damned tasty, though.

I had it at christmas, too. It was sliced and boneless. It was medium rare, and in the candle lit room, it hardly resembled duck, but it was. It was soo tasty. When I had it in France, it was a whole duck, with the bones and all.
