Use whatever fries you like. If you want to make them home-made, then that's fine. I use frozen fries.
Cook 3-5 strips of bacon in the oven til its crispy.
Crumble up some marble cheddar or old cheddar instead of using mozzarella curds.
Sautee up some onions and mushrooms in the bacon fat from the oven (or oil if you want)
Gravy for poutine I make using chicken soup stock with paprika, garlic powder, onion powder, basil and black pepper. Use corn starch to thicken.
Put the fries on a shallow bowl or place where the gravy won't drip off, put the mushrooms and onions. Cut the bacon into small pieces using scissors and spread all over. Add cheese. Then pour gravy on top.
If you eat it every day for a month you WILL have health issues.
