As for specifically why the Greeks... to the "civilized" world at the time, ancient Greece was considered the high of civilization and learned thought. The Romans copied what worked: Notice the republic style of government.
And hell, the Roman Aenied was written to connect the founding of their city with ancient Greece.
To add to this, the Romans respected the hell out of Greek civilization. They took everything Greek and added their own touch, making it Roman. They copied their entire style of architecture, but using Roman ingenuity, and advances in building material, to add things like domes and arches to it. The entirety of Roman architecture is basically Greek architecture plus arches.
The Roman's were such fans of Greek culture that they actually broke down as much Greek art and architecture as possible, broke it down, and shipped it to Rome. What they couldn't carry, they sent artists to make direct copies of and brought those to Rome.
