"Various and sundry" is a corruption or change over time from the phrase "All and sundry" which meant "everyone, individually and collectively". It dates back to Old English in origin, I think.
Some phrases persist because of the way they sound when being spoken, and I think that's why the altered and slightly less meaningful "various and sundry" has.
