Cooking tofu?

Postby Keb » Fri Mar 02, 2012 1:52 am

I want to make a tofu appetizers for some vegetarians who are coming over tomorrow because everything else will be meat. I was thinking of doing something like a small bite-sized sangwich with the tofu as a bread and some veggies in the middle (avacado, cucumber + sushi ginger). Not sure how to cook the tofu though. Can I pan-fry it or would I be better off cooking in the oven?

My wife fries tofu. She also just adds it into the pot as she heats up a sauce.

I don't think she bakes it, ever. But it's probably something you could do.

Make a glaze out of honey, a good soy sauce (tamari is best) and sesame seeds. Marinade / glaze them with it and bake them.

You can also fry tofu. Extra firm is best for that. What do you want to make specifically?

I'm Vegan and have a million cookbooks.

Like the honey/soy glaze. Thanks H. Can I spice it up a bit?

Shane, I'm trying to make a little mini slider/sangwich thing with the tofu as the bread.

Sure! The honey and soy are a base: you can add spices to taste. :-)

You can cook it any number of ways, just remember: Never lukewarm! :-D

Meaning of course, serve it either piping hot, or chilled, but never in between, as the flavor will be lost.

I'm not sure how you want your tofu though. You want it crispy? Then you're going to coat it and deep fry it.

And do remember to drain and press it before most cooking applications. And before using a marinade.

Yeah, I want it crispy but every time I deep-fry I get shit from my mother for weeks... If I cook it in the oven with oil on the pan on high heat will it crisp up?

I might deep-fry chicken and zucchini so I might do the tofu as well.

Sure, again, it will be breaded. Remember to press the tofu well, as it's mostly water. The goal is to get some of the water out without crushing to tofu. Then you bread it. And bake on an oiled pan until brown and crispy on the outside.

Feed them a dish sponge. It'll have the same texture and more taste.
