The Science Museum of MN has a Star Wars exhibit currently running.

You might be able to catch the best small ball team in the MLB at Metrodome. Not sure their current home schedule, and granted the dome sucks. You can always check out the St Paul Saints as well for some great minor league baseball.

There's also statues of Peanuts characters throughout the Twin Cities and the suburbs... if you can find those as well.
and there's always the 'Vu.
