Here's My 10 Favorite (not really in a particular order):
The Incredibly true Adventure of Two Girls in Love (1995)
I know everyone's going to think lesbian film, no wonder she likes it, but the reality is this is one of the best expressions of innocent love that I have ever seen. I always get gushy when they are in the field listening to music together. Also regardless of gender or sexual orientation this is a date film that really sets a romantic mood. I know straight men that swear by it.
Shakespeare in Love (1998)
Shakespeare, disguises, love, comedy - this film has everything. What's not to adore.
An Affair to Remember (1957)
A classic... I had to fight between including Breakfast at Tiffany's or this and this one won out. We watched this at college every few months.
50 First Dates (2004)
If I could find someone willing to woo me every day... :sigh:
The Princess Bride (1987)
If I have to explain this one...
"As you wish"
Across the Universe (2007)
For the record, I love being sung to. The whole idea of the end when he's singing on the roof to get her attention, gets me every time.

Again with the whole singing thing. Somehow I missed this film - a friend turned me onto it in 2006 and it's among my favs now.
I get weepy throughout the whole ballroom sequence. And look, more singing... :p
